At The New Zealand Whisky Collection, we craft our delicious Single Malt whisky from Otago-grown barley, distilled in Dunedin, and matured seaside in the cool, salt-laced air of Oamaru’s historic harbour district.

Every bottle we make is shaped by place, provenance, and patience.

Our Private Cask Programme offers whisky lovers the rare opportunity to go beyond simply buying a bottle – you become part of the whisky’s story. From choosing your cask style to attending the filling, visiting your maturing spirit, and designing your own personalised label, this is whisky ownership at its most intimate and rewarding.

The Grain & The Spirit:

We are currently distilling new make spirit produced from the grain harvest by Richard and Paige Wills on their local farm in Ngapara, just 20 minutes from Oamaru. The Wills’ farm, Black Point, has a rich microclimate and limestone bedrock soils – conditions that make it especially well-suited for growing premium barley. This barley is producing an excellent distinctive new make spirit which we are very excited about the quality and flavour profile of whisky it will produce.

YOUR CASK OPTIONS

20L CASKS

Cask Type & History:
  • Re-coopered 20L American Oak or French Oak casks.
  • Originally held ex-Bourbon, ex-Tawny or ex-Apera (Australian fortified wine).
  • Some casks also previously aged peated whisky.
  • Sourced from Launceston Distillery (Tasmania) and re-coopered by Transwood Cooperage.
  • Re-coopering process includes shaving, re-toasting and charring, which enables the alcohol in the new make spirit to penetrate the oak and extract the oak flavors which are the basis of good whisky.
What You Get:
  • Approximately 36 bottles (500ml at 46% ABV), or equivalent depending on chosen ABV.
  • Average bottle price of $105.00.
  • Matured for approximately 2–3 years in our Oamaru Bond Store.
  • Fully personalised labels on every bottle + presentation boxes.
  • Cask Ownership Certificate with fill date, cask number and estimated maturation.
Cost:
  • Single Payment Option: $3,795 inc GST (covers everything including excise + freight within New Zealand).
  • Two Payment Option:
    • First payment: $3,200 inc GST.
    • Second payment: excise + freight charged when bottling is complete.

55L CASKS

Cask Type & History:
  • 55L American Oak casks, sourced from Journeyman Distillery (USA).
  • Previously used for ex-Bourbon, ex-Rye, or ex-Wheat maturation.
  • U.S. bourbon regulations prevent Journeyman from reusing barrels, so we receive authentic first-fill American oak casks that have already matured rye, wheat, or bourbon.
What You Get:
  • Approximately 110 bottles (500ml at 46% ABV), or equivalent depending on final ABV chosen.
  • Average bottle price of $77.00.
  • Matured for 4–5 years in our Oamaru Bond Store.
  • Fully personalised labels on every bottle + presentation boxes.
  • Cask Ownership Certificate with cask number, fill date and estimated maturation timeline.
Cost:
  • Single Payment Option: $8,500 inc GST (covers all costs including excise + New Zealand freight).
  • Two Payment Option:
    • First payment: $6,450 inc GST.
    • Second payment: excise + freight charged at bottling.

FILL OUT & SIGN THE CONTRACT

Secure your chosen cask.
We’ll send you through a contract/order form, outlining your cask type, preferences, and payment options. 

INVOICE & PAYMENT

Confirm your cask with payment.
Once we receive your order form, we’ll issue your invoice. Once payment is settled, we can organise the next step – filling the cask!

CASK IS FILLED

Your cask is filled with fresh new-make spirit.
Attend the filling in person or via video, or we’ll send photos. You’ll also receive your official Cask Certificate with fill date and cask number.

LET THE MATURATION BEGIN!

Your whisky begins its seaside maturation.
Your cask rests in our historic Oamaru bond store, developing character over the coming years. Throughout the aging process – you’re welcome to visit your cask by appointment.
